This is a dried mushroom called “kikurage”. Soak it in water for 15 minutes and it will return to its original size and become soft. It has a wonderfully crunchy texture. It is often used in Chinese cuisine, but it is also used offen in Japanese tonkotsu ramen.

How to use

Soak them in water for about 15 minutes and they will return to their original state of kikurage.
Cut into thin strips and use as a topping for tonkotsu ramen.

Store in a low-humidity place away from direct sunlight.
