Simmered potato with bonito

Bonito flakes are used in a variety of Japanese dishes. For example, it is so in a simple dish of simmering potatoes.
Just by adding dried bonito flakes, the flavor is enhanced, so please try it!

Ingredients

  • 2-3 Potatoes
  • 200-300ml soup stock

Seasoning

  • 1.5 to 2 tbsp sake
  • 1.5 to 2 tbsp mirin (sweet cooking rice wine)
  • 2 to 3 tbsp sugar
  • 2 to 3 tbsp soy sauce
  • 5 to 6 g bonito flakes

Method

Pre-cooking

Peel potatoes, remove sprouts, and cut into bite-sized pieces.

STEP 1

Heat the potatoes and broth in a pot over medium heat and cook for 10 minutes, until a bamboo skewer easily pierces the potatoes.

STEP 2

Add the ingredients, reduce the heat to medium-low, and simmer until the liquid has reduced. Finally, shake the pan to remove the water.

STEP 3

Add bonito flakes, season quickly, and serve.
