Begin by finely chopping 1/2 a cabbage. Don’t worry about precision—a rough chop will work just fine. Aim for bite-sized pieces that are easy to mix.

Make the Batter

In a large mixing bowl, combine 160cc of water and 100g of okonomiyaki flour (the white powder from the included large bag).

Mix gently—don’t overmix! Leaving small lumps in the batter ensures a fluffier texture.

Add the Cabbage and Toppings

Add the chopped cabbage, two eggs, and the included tenkasu to the batter. Gently fold the ingredients with a spoon. Be careful not to overmix, as this can release too much moisture from the cabbage.

Heat the Pan

Heat a frying pan over medium heat and coat it with a thin layer of cooking oil. Once warm, pour the batter into the pan. Avoid making it too thick—a moderate size is easier to flip.

Add the Pork (or Ham)

Place slices of pork belly on top of the batter. If you’re using ham, layer it neatly. Avoid adding cheese or other ingredients at this stage as they might stick during flipping.

Cook the First Side
