Have you ever heard of a dish called “Niku-jaga”?
It is one of the Japanese home-style dishes that every family eats.” Niku” means meat in English. Jaga” is an abbreviation of “Jagaimo” potato in Japanese.
It is not a common restaurant menu item, but it is one of the most common dishes at Izakaya izakaya (Japanese izakaya).
It is easy to make! All you need is a few root vegetables and some meat! It is similar to making curry. It is seasoned with dashi (Japanese soup stock) and simmered thoroughly.

Ingredients

  • Sliced beef: 150 g
  • Potatoes: 2 large
  • Carrot: 1 carrot
  • Onion: 1 onion
  • 6 green beans
  • Shirataki mushrooms: 120g
  • Dashi (soup stock): about 500 ml
  • Sugar: 1 tablespoon
  • 4 tablespoons mirin (sweet cooking rice wine)
  • Sake: 1 tablespoon
  • Soy sauce: 4 tablespoons

Method

Pre-cooking

Cut potatoes into bite-sized pieces and soak in water.
Cut beef, carrot and onion into bite-size pieces.
Cut shirataki mushrooms into bite-size pieces.
*Boil in boiling water for 3 minutes to remove lye.
Boil green beans and cut in half.

STEP 1

Heat oil in a pan, saute beef, potatoes, carrots and onions, and add shirataki mushrooms.

STEP 2

Pour in broth, sugar, mirin, and sake until the ingredients are soaked.

STEP 3

Cover with a lid and simmer over low-medium heat for 10 minutes.

STEP4

Add soy sauce and simmer until potatoes are tender.

STEP5

When potatoes are tender, add green beans.
