Miso soup with tofu and green onion (serves 3)

Tofu and scallions are classic ingredients in miso soup. As long as the dashi broth is strong, these are the only ingredients needed to make a delicious miso soup.
You can make a strong and flavorful dashi by using Chiyo Dashi.

Ingredients

  • 1/2 tofu
  • A pinch of wakame seaweed
  • A few sprigs of green onion
  • 2 tablespoons miso
  • 1 packet soup stock
  • 600-800cc water

Method

STEP 1

Cut tofu and wakame seaweed into bite-size pieces.

STEP 2

Pour 600-800 cc of water and a packet of dashi into a pot and bring to a boil, then simmer over low heat for 5 minutes.

STEP 3

Dissolve miso in 2), add ingredients, and quickly heat through.
