“Kake Udon” is the simplest of all udon noodles. There are many ways to make dashi (Japanese soup stock), but this time we will use the dashi packet from Chiyo. There are no other ingredients, only green onions. You can really taste the flavor of the broth in this udon.
Ingredients
- 1 bunch udon noodles
- A few green onions
- 400cc water(for soup stock)
- 1 packet soup stock
- 1 tbsp soy sauce
- 1 tbsp mirin (sweet cooking sake)
Method
STEP 1
Put water and dashi packet in a pot and heat. 2) When it comes to a boil, lower the heat and simmer well for about 5 minutes.
STEP 2
When it comes to a boil, lower the heat and simmer well for about 5 minutes, then add mirin and soy sauce. (If the dashi packet starts to float, push it down several times with the back of a ladle to submerge it.)
Now the dashi broth is ready.
STEP 3
Boil water in another pot and boil udon noodles.
STEP 4
Pour the broth made in step 2 into a bowl and put the udon into the bowl.
Finish by placing a small piece of chopped naganegi (Japanese leek) on top.
Add shichimi (seven spice) to taste.
