Yuzu kosho is used mainly in Kyushu as a condiment for nabe dishes, sashimi, yakitori, and other Japanese-style dishes. Kosho means chili pepper, and as the name suggests, this seasoning is made from yuzu and chili peppers. One of the prominent birthplaces is Hita City, Oita Prefecture. Yuzu (citron) cultivation is flourishing mainly in the Tsue area of Hita City, and it is said that yuzu kosho has been made at home since ancient times.
