Tonkotsu Ramen Recipe to Make at Home

This is a recipe for "Tonkotsu ramen" made at home.

You can recreate the taste of ramen as you would in a Japanese Ramen restaurant.
This Tonkotsu ramen recipe uses instant noodles, so it's easy!

The pork bone broth of this ramen is made from the pork bones of black pigs produced in Kagoshima Prefecture.
It is very tasty and refreshing despite its strong flavor.
Can you see the blackish substance on top of the soup? That's burnt green onion. Green onions are an essential part of ramen, but in the case of this ramen, burnt green onions are added.
Easy to make! So let's make it!
This time we will add the kikurage ingredient. This is not included in this ramen set, but it is a standard ingredient in pork ramen.

Soak dried Jew's ear mushroom in water.

A mushroom called kikurage is used as a garnish for tonkotsu ramen. For this, you need to soak the dried kikurage in water.It takes about 15 minutes to soak them in water, so it would be best to do this ahead of time.


In the meantime, boil the water.

Prepare the hot water for the ramen soup separately.

In the normal way of making this dish, the hot water after boiling the noodles is used as soup. This time, however, I prepared the hot water for the soup separately.
I think this will make the soup more delicious.
The amount of hot water for one serving of ramen is about 500ml.
Roughly 2cups and a bit.

This is the ramen I’ll be using.

This time, we will use this “Kagoshima Tonkotsu Ramen”. Unlike most instant ramen, it is made with non-fried noodles.

It contains powdered soup, and oil for seasoning and noodles.
Some of the images have funny faces, but don't worry about it.


Cut the "Kikurage" mushroom.

Cut the water-soaked kikurage into pieces of appropriate size. Cut them as you like.
When the water was boiling, the kikurage started to form. If it looks like you need a little more time, wait a little longer. Please refer to the image.


I'll prepare the ramen soup first.

Before boiling the noodles, prepare the soup.
Make sure that you only pour in hot water.
Because if you boil the noodles even a little too much, the noodles will become too soft.
This is so that you can transfer them to the soup at the best time.
Here is the order.
1 Boil the noodles.
2 When the noodles are done boiling, pour hot water into a bowl to make soup right away.
3 Transfer the noodles to the soup.


Let's boil some noodles!

Now, let's boil the noodles. This time, I'll use a bunch, since it's for one person.
It says to boil for 3 minutes, but if you boil for 3 minutes, the noodles will become too soft.
Be sure to turn off the heat when the noodles are a little hard.
*In my case, I stopped boiling after a minute and a half to two minutes.

After you put in the noodles, the water may overflow after a while.
You may want to lower the temperature a bit.


Pour hot water into the powdered soup.

Speed things up from here!
When the noodles are almost ready, pour hot water into the powdered soup.
After stirring gently, add the noodles into it.


Now, let's serve the ingredients for the Tonkotsu ramen.
